Zucchini Almond Bites from Carol's Kitchen

What do you do with the insides of the zucchini after removing the outside for zucchini noodles?  You make Zucchini Almond Bites, that's what. I made this for the first time today and was pleasantly surprised.  I figured out the recipe and macros. And, I took some pictures along the way......

Zucchini Almond Bites by Carol Blackburn

Ingredients -
Zucchini innards sliced into 1/8 - 1/4 in. thick pieces
1 egg (beaten)
1/2 Cup Almond Flour or Meal
2 T. Coconut Oil















Dip the zucchini pieces into the egg, then coat with the almond meal.


















Place in fry pan in the 2 T. heated coconut oil.  Turn after a few minutes when lightly browned on one side and brow the other side.  

















Remove to a paper towel lined plate.  

















When cooled, enjoy them straight for the nutty taste with moist centers or add a tiny dollop of sour cream for in interesting and addictive taste. 






I just can't describe it. 










Recipe makes about 20 pieces.

Serving size 5 pieces -

258 calories per serving
22 grams fat
9 grams protein
8 grams carb

Add extra calories if sour cream used.
1 T. = 30 calories  2.5 grams fat .5 grams protein .5 grams carb

I hope you enjoyed seeing what I created in the kitchen today.  I'll have to be careful with these treats.  I have stored them in an airtight container in the refrigerator to see how they hold up.  I wish I could eat them all right now......but I already ate 4.

Enjoying Bulletproof aka Hot Buttered Coffee for Weight Loss

I thought I'd share something I've been doing for a couple of months now that has been helpful to me in achieving my weight loss goals. I was 155 lbs. at my highest weight and not liking it one bit.  I got to 154 very slowly then started to check out other ways of losing the weight and found the Ketogenic way of eating and switching my metabolisim from being a carbohydrate burner (gasoline) to burning ketones (diesel).   As the video will explain how I got started drinking Hot Buttered Coffee, I won't go into that here. But, my weight is now 137.

Other ways of making Bulletproof coffee are to add Coconut Oil in conjunction with the butter or on it's own, as well as to use heavy cream.  Mind you, a coffee with butter or oil and heavy cream will add up in calories but if you are burning ketones as fuel (like running on diesel instead of gasoline) the extra calories will be burned off to give you energy and mental clarity.

Got the Muchies? Try some Moon Cheese!

Found this great new thing to replace those potato chips I don't eat anymore because I still need to crunch from time to time.  One can only eat so many macadamias or almonds so that's when you turn to the Moon Cheese, crunchified 100% natural cheese.  I love the Pepper Jack!  And zero carbs!



Not easy to find in stores. Wal-mart here sells it online though so I ordered myself 3 packs. A great replacement for croutons on salad, too.

Sorry, gotta go crunch.....

10 Tai Chi Moves for Beginners - 14 Minute Daily Taiji Routine





Did you know 15 minutes of Tai Chi is equal to a 20 minute walk.  Too hot to walk today so I did my Tai Chi.  How about you?   This is a great video to get you started with this wonderful form of exercise also known as "moving meditation."  I recently read an article that said Tai Chi is great exercise for those with Fibromyalgia.  I have been doing Tai Chi for about 10 years now and still enjoy it very much.   I hope you'll check out Jace Mace's video even if you don't try Tai Chi.  The beautiful scenery and music is very relaxing.

That's Mr. Butterball to You

I had a visit from a very large male wild turkey this afternoon.  I called him Butterball.  Then he turned to look at me and it was if he thought, "that's Mr. Butterball to you.


I wonder what is up with that horn on his head, as I have never seen one like this before.



Lots of great color on this fellow. And a nice long beard. 


Must be a bachelor, no females in sight.

When the Teacher is Respected

I just realized I haven't posted in 5 days, not that there hasn't been anything happening, I've just been busy with everyday life.  But everyday, when I take out the hair dryer, I am reminded of my dear 84 y.o. Aunt whom I recently visited in California this passed May.  She was a wonderful role model for me as I was growing up.  I would spend 2 weeks at her house in the country every summer.  I would cry when it was time to return to my home in the city.  It's where I developed my love of rural living.  Most likely why I have retired in the hills of Maine.  It's my peaceful place on earth.

What I learned from my Aunt, when I visited her in May, was not spectacular in any way other than the fact that she taught it to me.  You see, the teacher must be respected in order for the student to really listen to what they are saying and learn from them.

This is what I learned -


Yes, I learned to secure a cord with an empty toilet paper tube so it does not get tangled.  Simple as that.
I'd probably seen or heard of doing this before but then why was I still wrapping cords, twisting them, and getting frustrated when I had to undo one to use the item.  Now I do it this way.  So much simpler and another thing that makes me think of my Aunt.

Spinach with Feta Cheese - My Light Keto Lunch





Spinach with Feta Cheese

2 cups baby Spinach, washed and thick stems removed
1 T. Coconut Oil
1/4 cup Feta Cheese, crumbled
dash of crushed Red Peppers (like the ones you used to put on your pizza)
drizzle (approx. 1 tsp.) EVOO (extra virgin olive oil)

Saute the Spinach in Coconut Oil until well wilted.  Transfer to small plate and top with 1/4 cup of crumbled Feta Cheese.  Add a dash or few sprinkles of crushed Red Peppers. And drizzle with approx. 1 tsp. Extra Virgin Olive Oil (EVOO).  Now enjoy!

Serves 1   Calories 250  Grams fat  24.75  Grams protein  7  Grams carbs  4  Grams net carbs  2
Makes a good quick and light lunch.  Takes approx. 15 min. to prepare.

Bunny - Get The Camera

Hmmm, I thought he said "Honey, get the camera."


Nope, he meant "bunny." 

Only the second Rabbit we've seen here in 12 years.
I thought we'd see more than that since we are living in the country.

Hubby says "he's probably the same one."

New Kid on the Block

Just happened to go into my bedroom a few minutes ago and had to run back to the computer room for the camera to come back and capture a shot of this ROSE BREASTED GROSBEAK.  He's not one I've seen before and certainly qualifies to be called the new kid on the block.

Claude Visits Today

Those of you who have followed me for awhile know that there is a Marmot that lives in my backyard somewhere that I've named Claude because he is well-clawed.  He's been here a couple of years now and I think he's looking a bit older.  He loves to munch to grass just before Hubby decides it's time to give it a cutting.  And,  I think he's eating all of the 4-leaf clover too.

I watched him for quite some time and then he heard a rustle in the woods and ran to the edge of the yard to listen.  I thought it was so adorable.


Since I am someone who is home quite a lot of the time, I am grateful that the good Lord provides me with such wonderful entertainment.
